白菜のエディブルストーリー/ 2023

白菜のエディブルストーリー/ 2023 まだ肌寒いけれど春めいたひかりの土曜の朝。みんながなんだか嬉しそうに見えた。さて今日は何を買おうかな?立派な白菜と柑橘類をいろいろと買った。

このエディブルいけばなをした後、餃子を作ろうと思っていたがアトリエにネギを置き忘れ、急遽予定は変更。簡単な乳酸発酵の浅漬けを作ることにした。

ベースは米の研ぎ汁。それに塩と昆布で終了。

作った次の日はまあそれなりのあじ、二日目ぐらいから一気に美味しくなって三日目ぐらいはいいバランス。酸っぱくなるのも美味しい。
